Kaiseki means Japanese Course Dinner - it likes French Course Dinner!
Strictly Speaking, Kaiseki Dinner has 2 different words but same pronunciation such as Kaiseki "会席” and "懐石".
At Edo period, "会席" dinner took a meaning about "Dinner for enjoying Sake (Alcohol)" and "懐石" took a meaning about "Enjoy dinner with tea"
Therefore, "会席" dinner is more simple dinner and important point is that dinner should not interrupt for enjoying Sake.
On the other hand "懐石" is more gorgeous dinner and important point is that people must enjoy eating dinner without Sake.
In recent years, Japanese people does not care about difference of "会席" and "懐石" .
